It's important to "debunk" some myths about home canning. Similarly, it's important to follow current guidelines for home canning instead of old recipes.  Over the years, our understanding of food safey has grown.  At the same time, new technologies and agriculture crop varieties have been developed.  While older recipes might be family favorites, they may not have been properly tested to achieve adequate heat processing times and temperatures for food safey and quality.  Failure to use the proper processing method and processing times can affect the quality and safety of your final product.

 

To be sure you're canning safely, use only current, tested home canning recipes that:

 

  1. includes the appropriate heat processing method the type of food being canned
  2. provide a specific processing time for the specific food and mason jar size you are using
  3. designate headspace for the food and jar size
  4. come from reputable source that uses the jars and lids you are are using today
