Apple Spiced Pear Freezer Jam – Freezer Jam Pectin

Cooking and sugar are kept to a minimum in this spread that resembles old-fashioned fruit butters with sparkling fresh fruit flavour.

Ingredients:

  • 1 cup (250 ml) granulated sugar or SPLENDA® No Calorie Sweetener
  • 1 pouch (45 g) BERNARDIN® Freezer Jam Pectin
  • 4 cups (1000 ml) chopped, peeled apples
  • 4 cups (1000 ml) chopped peeled pears
  • 1/4 cup (50 ml) water
  • 1/2 cup (125 ml) lightly packed brown sugar or 1/4 cup (50 ml) SPLENDA® Brown Sugar Blend
  • 3/4 tsp (4 ml) ground cinnamon
  • 1/4 tsp (1 ml) Each: ground cloves, nutmeg & allspice

Directions:

  • Wash and rinse 5 BERNARDIN® Freezer Jars and lids or 250 ml mason jars and closures.
  • Combine apples, pears and water in a saucepan; simmer, covered, 5 minutes. Crush fruit; measure 4 cups (1000 ml) cooked fruit.
  • In a large mixing bowl, combine Freezer Jam Pectin and sugar or SPLENDA® and spices until well blended. Stir fruit mixture into pectin-sugar mixture; stir 3 minutes.
  • Ladle jam into jars, leaving 1/2 inch (1 cm) headspace. Wipe jar rims removing any residue. Apply lids tightly. Let stand until thickened, about 30 minutes. Refrigerate up to 3 weeks, freeze up to 1 year, or serve right away.
