Hearty Vegetable Soup Mix

Try this on a cold winter’s night, it will be sure to warm the coldest one.

Ingredients:

  • 1 cup (250 ml) Each: pinto, kidney, small lima & white navy beans
  • 1 cup (250 ml) Each: yellow and green split peas
  • 1 cup (250 ml) Each : whole green lentils and pearl barley
  • 4 x 500 ml BERNARDIN mason jars & 2-piece SNAP Lid® closures
  • Chili powder, divided
  • Ground cloves, divided

Directions:

  • Combine beans, peas, lentils and barley; mix well. Divide equally, pouring into 4 mason jars.
  • Add 2 tsp (10 ml) chili powder and 1/4 tsp (1 ml) ground cloves to each jar.
  • Apply lid and screw band tightly and attach cooking instructions.

Cooking Instructions

  • Pour contents of jar into large saucepan; add water to generously cover beans and let stand overnight. Drain water; add 8 cups (2000 ml) water to soaked beans. Bring to a boil; reduce heat & simmer 1 1/2 hours. Add 1 chopped onion, 2 diced carrots, 1/2 lb (250 g) smoked sausage or cubed ham and 1 jar of home canned tomatoes (or 1 28 oz/796 ml can); cook 30 min. longer. Stir in 2 tbsp (30 ml) sherry, if desired, and 1 tbsp lemon juice.
