Peach Raspberry Freezer Jam – Freezer Jam Pectin

Fresh-picked, natural fruit flavours star in this simply delicious jam that uses far less sugar that most freezer jams. Better yet, you make in under 30 minutes!Simply crush, stir and serve or freeze.

Ingredients:

  • 1 -1/2 cups (375 ml) granulated sugar or SPLENDA® No Calorie Sweetener
  • 1 pouch (45 g) BERNARDIN® Freezer Jam Pectin
  • 2 -1/2 cups (625 ml) peeled, pitted & crushed peaches, about 4 large
  • 1 cup (250 ml) crushed raspberries
  • 1 tbsp (15 ml) lemon juice

Directions:

  • Wash and rinse 5 BERNARDIN® Freezer Jars and lids or 250 ml mason jars and closures.
  • Crush prepared peaches; measure 2 -1/2 cups (625 ml)Wash, thoroughly drain and crush raspberries; measure 1 cup (250 ml); add to peaches.
  • In a large mixing bowl, combine the prepared peaches, the raspberries and the lemon juice with the sugar or SPLENDA®. Stir until sugar dissolves; let stand 10 minutes.
  • Gradually stir in contents of Freezer Jam pouch into fruit-sugar mixture until dissolved. STIR 3 MINUTES LONGER.
  • Ladle jam into jars, leaving 1/2 inch (1 cm) headspace. Wipe jar rims removing any residue. Apply lids tightly. Let stand until thickened, about 30 minutes. Refrigerate up to 3 weeks, freeze up to 1 year, or serve right away.
